Also known as the Egyptian lentil, it is a genuine legume and compared to others more resistant to weather conditions and above all to weeds. With a stronger and tastier flavour, the red lentil is often used in soups, it is highly digestible, requires a short cooking time, is low in fats apart from “good” fats, the so-called omega 3. It has therefore antioxidant properties and this makes it a recommended food in children’s diets.
