This lentil has the most delicate and true flavour and is the most common throughout our territory, it is mainly used in combination with other legumes and cereals especially with durum wheat pasta. Rich in protein, fiber and mineral salts, like the other species of the lens culinaris family, it is a fundamental food in the Mediterranean diet and for celiac disease: it has antioxidant and anti-tumour properties.

Unlike the red variety it has a late and abundant flowering, favoured by the climate conditions found in Puglia and Lucania, which offers sunny and cool spring days.
